After the wine has fermented, about one week, the winemakers fill the bladder press.  The black rubber bladder, seen in some of those photos, is inflated with water.  As the bladder expands, the wine is squeezed out and collected in the press pan.  The wine is then pumped from the press pan into an oak barrel and the barrel is transferred to the barrel room for aging.
